When one is dedicated to using only the finest ingredients in all that is prepared and served, how can anything go wrong? My late grandmother always said that starting with superior ingredients leads to superior results but this is only true if the ingredients are combined correctly. It is essential for a chef to be an artist as well chemist when it comes to preparing food.

Anyone can make sauce, but very few can make a great sauce. It takes precise measurements of all the elements and fusion of all the ingredients to achieve a harmonic entanglement of all the flavours.

In the following pages you will be treated to a spectacular display of photography that chronicles our culinary odyssey across BC. Enjoy and Bon Appetit.
