edge-1Enter a Culinary playground where the line between fantasy and reality are blurred; a place where any and all ideas manifest on their ever evolving canvas. Welcome to the EdGe. The EdGe came about (Ed- for Edward, Ge for Gemma) because after working for over 14 years at the Sooke Harbor House as the Executive Chef, Edward finally felt it was time to do his own thing. The EdGe opened its doors in Sooke BC on May 15th 2009.

Meet hostess extraordinaire Gemma and Chef Edward-the-great from my new favorite restaurant in the whole wide world, The EdGe.

edge-2While there are other reasons to visit Sooke (are there? Just kidding…), these will be hard to discover if you stop at the EdGe first. Whatever you thought you knew about food will be forgotten when you see, smell and taste his cuisine.  Chef’s food pushes the limits of our culinary consciousness. It’s said to be more convincing to discover for oneself than to have an explanation from others, and this is truly one of those cases where mere words will make poor justice to the actual experience.

The house-made salami platter, crispy corn crusted halibut, the curry lamb, and the pork cheek are all simply out of this world. Everything on the menu is simply mentalicious. The epicurean in all of us is restaurant-‘restored’- brought back to a state of health, soundness, or vigor.
