The Spa-Essence of Life offers a vast array of incredible treatments and services featuring natural herbs and botanicals and a unique therapy treatments. They offer everything from massages, body wraps, facials, aqua therapies and nail treatments; all given by highly trained and gifted estheticians and practitioners. Once you’re done with your treatments make your way in to their relaxation room, where you can further unwind and revitalize.
On this visit we were treated to the most sublime meal. Chef went all out on this evening. Each dish was presented with even greater detail, ingenuity and perfection. To start off this dining extravaganza we invited on the Local organic Greens, with most lovely and well balanced vinaigrette dressing, which brought out the wonderful Lychee and Pineapple flavors of the Blasted Church Gewürztraminer 2008. What followed was the Haida Platter which features Dungeness crab, oysters and mussels. This dish paired superbly well with The Blue Mountain Pinot Blanc 2008.
For course number three we welcomed the Grilled Salt Spring Lamb Chops, with corn polentas, olive tapenade and a red wine demi. Every bite was better than the last; the meat falls off the bone and melts. This dish paired perfectly with the Desert Hills Gamay 2008. And for our final course of the evening we enjoyed a succulent and masterfully prepared Grilled wild Salmon filet over seasoned vegetables. A perfect fusion of ingredients. Well done, Chef.
